Dried Scallops (Conpoy)
Hokkaido, Aomori and Chinese adductors by diameter and count

BSA Food Products supplies peeled dried shrimp and larger dried prawns to importers, Asian grocery distributors, restaurants and sauce manufacturers, graded by size, color and dryness with additive status declared on every lot.
Indicative; confirmed per lot on each quotation.
Dried shrimp is one of the highest-volume lines in Asian dried seafood, bought in quantity by kitchens and food factories alike. Small peeled dried shrimp, known in Cantonese as ha mai, are cooked in brine, dried and tumbled to strip away the shells, then sieved into size grades. Larger dried prawns are usually left shell-on or partly peeled and sold as a more premium item for braising, soups and gift packs. Tiny shell-on baby shrimp form a separate, lower-cost product and are quoted as such.
Raw material comes from several warm- and temperate-water shrimp groups, including Metapenaeus, Parapenaeopsis and Solenocera species, with larger dried prawns produced from Penaeus and related species where supply allows. Production centers include southern and eastern China, Vietnam, Thailand, Malaysia, Indonesia and Mexico. Grading is by length band or count per 100 grams, and whole, unbroken bodies, consistent sizing and low shell residue mark the higher grades.
Color is where buyers need the most care. Natural color ranges from pale pink to deep orange depending on species, cooking and drying, and an unusually bright, uniform red may point to added color. We offer no-added-color lots on request, subject to what the supplying processor can produce, and any color, sulfite or other additive used is declared on the specification so that your labeling follows destination rules. Each lot is also checked for moisture, salt, shell and leg fragments, sand, mold and off odors.
Shrimp is a crustacean and a declared allergen in most major markets. Typical uses range from XO-style sauces, chilli oils and dumpling fillings to fried rice, turnip cake and South-East Asian sambals. As a wholesale dried seafood supplier serving foodservice and manufacturing, we pack in bulk cartons or in private-label retail packs, and many sauce makers pair dried shrimp with dried scallops for premium condiment recipes.

FAQ
Yes, on request. Whether a no-added-color lot is available depends on the supplying processor and the season, so we confirm it at quotation rather than assuming it. Naturally colored shrimp is usually paler and less uniform than colored product, and we suggest starting with a trial order so that your own customers know what to expect on the shelf.
Some processors use sulfiting agents to control darkening and others do not. Our specification states whether sulfites or any other additives are present, and lots can be tested for sulfur dioxide where your market sets limits or requires labeling. Permitted additives and declaration thresholds differ by destination, so please confirm your market’s rules with us before ordering.
Peeled shrimp is sieved into length bands or counted per 100 grams, with whole, unbroken pieces and low shell content in the top grades. Smaller and broken grades cost less and suit sauces, fillings and seasonings where appearance matters less. Tell us the dish or product you are making and we will suggest a grade that fits both the recipe and the budget.
Each shipment carries a commercial invoice, packing list and certificate of origin, plus a health certificate where the destination requires one. We also provide species, additive and crustacean allergen information for your labels. For a broader view of import paperwork, read what importers need to know before ordering dried seafood.
